Tomato Rice Casserole


1/2 cup Olive Oil

Four large fresh tomatoes diced

Mushrooms, 1 cup

Chopped Onion, 1 cup

Chopped Green Pepper, 1 cup

Chopped zucchini, 1 cup

2 HeapingTablespoons chopped garlic

1 Tablespoon Basil

1 Teaspoon Marjoram

1 Tablespoon Italian Seasoning

1/4 teaspoon pepper ( add more if you like spice)

1/2 teaspoon salt

1/4 Teaspoon cinnamon

Saute all veges then simmer until sauce thickens a little

( If you don't want to make the sauce from scratch use all veges and spices  listed above. Instead of simmering forever add 1 can of pre-made speghetti sauce and omit two of the fresh tomatoes, however I would not recommend Prego, it is too sweet.)

Once the sauce is to your liking Pour into a casserole pan, (one that is much larger than the amount of sauce you've prepared.)

Cook 1 1/2 cups of rice and add it to the sauce. (will yield 3 cups)

Then add the following:

1 cup Pitted,Chopped Calamata Olives

1 can Black Beans rinsed and drained

1 can Tuna in water drained and flaked apart

Bake at 350 degrees for an hour and enjoy.

Tomato Rice Casserole

This recipe was really a happy accident. I needed a way to use two gallons of vegetables that I had left over from an event that I catered. I didn't want the veges to go to waste so I made a tomato based sauce and froze it. The following week was my turn to add to the coffee hour menu so I decided to use the two and a half gallons of sauce that I made to make this dish.  It is completely gluten free and totally anti inflammatory for those that need to be concerned for their health. To make this dish vegan just omit the tuna.
